MY FAVORITE DISHES WITH LEFTOVER ROTISSERIE CHICKEN? #3


CHICKEN SALAD SANDWICH

INGREDIENTS: (amounts will vary depending on how much chicken you have)
Leftover Chicken shredded or cut into small pieces
1/4 cup of pineapple juice
1 tomato or 10 cherry tomatoes
1/2 Celery stalk cut into large pieces (1 if using the heart only)
1/2 Celery stalk diced
1 large carrot broken or cur into large pieces
1 large carrot diced
Grated Parmesan Cheese
2 tbsp chopped walnuts or pecans
1/4 cup raisins
Slices of toasted whole wheat bread

In a blender put the pineapple juice, tomatoes, large pieces of celery and carrot. Save the diced carrot and celery for later. Blend until texture is even. Add chicken little by little making sure you have some left. (You should obtain a paste). Add parmesan to thicken the paste as needed. Pour you patè into a large mixing bowl and add the remaining chicken, diced veggies, walnuts and raisins. Taste, add salt if needed. To give it a twist you can add cumin or curry or nutmeg. (they all go very well with this recipe but don't add all together!) Serve with the toasted bread and fresh fruit on the side or make lettuce wraps! I like to add arugula to the sandwich...Yummy!

BREAKFAST IN BED - WHO DOESN'T LIKE IT?




If you are bringing breakfast in bed for anyone, put attention to the details. Please, no disposable plates! I was impressed by my dear husband and kids' choices! From the plate to the arrangement of the food. Beautiful & delicious! They really put their hearts into it. Literally! THANKS!

HOW TO REMOVE THOSE WHITE HARD WATER STAINS



The one change I did not like when I moved to Texas was the quality of water. If you have hard water where you live - and more than 85% of American homes do - you hate the white stains hard water leaves on any surface, right? The stains are caused by the excessive calcium and/or other minerals in the water. Well, forget about all those expensive products you buy! I have tried many and they don't really work. The solution is in your pantry and, besides cheap, it's green: vinegar and baking soda. Spray the vinegar (which is acidic) on the surface and let is sit for about 5 minutes. This step is important! The vinegar has to first soften the stain, be patient! Then, pour the backing soda on top of the vinegar  and watch for some bubbling action! Wipe with a wet cloth or sponge, or for hard to reach corners, like around your faucet, scrub with and old tooth brush dipped in baking soda. Repeat until stain is gone or any time they come back. You will not believe it! Even the most stubborn stain will be gone!

In my house we buy at least, the 5 Pound bag of baking soda because we use it in so many different ways! It is amazing! It is not only cheaper but much healthier than chemical products! Want to find out what you can use baking soda for? Try one of the books bellow and have a healthy living!

TRADITIONAL BRAZILIAN PARTY CANDY, YUM!



These are trademarks at kids birthday parties in Brazil: "brigadeiro" and "beijinho de côco" or chocolate candy balls and coconut kisses. All my friends know  they are part of my parties! They are pretty easy to make, it just takes time to roll them, but the effect is worth the work. Besides they are amazingly delicious! Say goodbye to your diet!

Chocolate Balls (brigadeiro):
  • 1 can of Nestlè condensed milk
  • 4 tbsp unsweetened chocolate powder
  • 1 tbsp unsalted butter + butter to roll the balls
  • chocolate sprinkles to coat
Coconut Kisses (beijinho de côco):
  • 1 can of Nestlè condensed milk
  • 100g coconut powder + some to coat the balls
  • 1 tbsp unsalted butter + some to roll the balls
  • cloves 
(Do not buy sweetened American coconut. You will need to use pure coconut, dry and powdered. If you have a Brazilian store nearby or a grocery store which offers Brazilian products on their Internationl isle you will can find it. Or you can find it at the Indian section at your supermarket too. In Texas we have Fiesta where I find mine at great part with Indian products.)

The preparation is the same for both:
In a sauce pan add the condensed milk and chocolate or coconut. Mix well BEFORE, then heat the pan at medium flame. When warm add the butter. Keep mixing until it starts to thicken. It will get more watery before it thickens. Don't stoop mixing and don't try to use high heat to speed up! It will burn the mixture! When it starts coming of the bottom of the pan, it's ready! Turn off the stove and place it on a buttered shallow pan (glass or metal) until it cools. Once it is completely cool, it is ready to be rolled.
This process is simple and easy, but it can get messy. It is WAY easier if you have two people. One to roll the balls and another to coat them. First open the paper or aluminum cups you will use to serve. (I am lucky enough to have someone bring to me the tiny cups above, I never found them here). Use the smallest cups you find. Place a thick layer of the coat (chocolate sprinkles or coconut powder) on a plate. Spread butter into hands and fingers and roll the balls into your palms in circular motion. Then coat with the coconut or sprinkles. If you don't  have a helper, make a few then coat them, wash your hand and start again. A helper will save you the constant hand washing! You can use color sprinkles too, like I did above. For the coconut kiss, decorate with a clove in the middle, but remove it to eat.

(The size of the balls and quantity of them will depend on the size of cups you find, thus the size of balls you are making. For mini cupcakes paper cups, you will get about 30 chocolate or 4o coconut balls for each recipe.) If baking for a bigger party, you can double or triple the recipe with no change on the results.

TIPS: If you do not like chocolate or coconut (some people ARE crazy!) you can do a white ball just with the condensed milk. If you LOVE both, try coating the chocolate balls on coconut! Yum! For a themed party use colored sugar to match the theme!
These recipes can be made up to 10 days to 2 weeks in advance. Freeze the rolled balls into a container and place them on the cups the day before the party. If baking up to a week before, just keep it refrigerated.

MAKE A RAINBOW PARTY - FUN & COLORFUL!


Somewhere over the rainbow a little girl turned 3!  


The party was simply beautiful! This is a gender neutral theme you can use for any age. All the food served was colorful and I had a table of treats (above) to die for! Since the party was outdoors, I placed rainbow colored pinwheels around the yard, planted colorful flowers on a large pot a month in advance so the pot looked more mature for the party (bellow) and even decorated with wind chimes and outdoor decor following the theme.


Here is what was served: veggie platters (broccoli, red and yellow cherry tomatoes, carrots, yellow squash and petit cucumber), fruit trays (black grapes, strawberry, papaya, mango, green grapes, blueberry, oranges, grapefruit and  kiwi), avocado, blue corn and yellow corn tortilla chips, butter popcorn, rainbow goldfish and fruit loops. Unfortunately there are no pictures of them. ;(
We decided to buy an inflatable bouncer instead of renting one and it was great! We paid almost the same and the kids have been using it a LOT! But since it was a little smaller then the ones we use to rent I bought a "paint your own" pin wheel (it is VERY windy in Texas in April) at Oriental Trading Co. So I set a few cans with markers for the kids to draw, but I wasn't sure kids would be interested. It turns out it was a huge success! Kids really enjoyed!

I paid attention to every detail... To sing happy birthday, instead of the traditional hat, I opted to each guest a rainbow lei, displayed in  a glass canister before given out (bellow). Bows of a rainbow ribbon (found at Hobby Lobby) added a little charm here and there.

But the table of sweets was the hit! I am not sure if it was because of the decoration or the delicious treats! That is why I will be posting recipes  and detailed pictures of all the sweets this coming week! So you will need to check for: the butterfly goody bags, Brazilian Chocolate Balls (Brigadeiro), Brazilian Coconut Kisses (Beijinho de Coco), Soft Mary (Maria Mole), Rainbow Jumbo Cupcake, Confetti Cupcakes with Rainbow Frosting! Yumm! We we still had Rainbow Layered M&Ms, Jelly Beans Jar and Lollipops!

I could not have done it without the help of my family who was visiting from Brazil and the wonderful work of my friends from idea studio, who made the personalized invitation, labels and thank you notes! Thanks for coming! 

Besides the butterfly bag each guest received a bag with a tag saying "thanks for coming!" (above) with little toys all with the rainbow colors, but I found the rainbow crayon at OTC.

Butterfly Goddy Bag - Simple, Affordable & Cute!



Besides this is a very affordable idea! Simply fill a snack size ziplock bag with goodies. Paint wood clothespins in any color you desire and make a little face on the top. If you want you can use pipe cleaners for antennas.  Clip bag in the middle of bag and voilà! You can arrange the butterflies on a tray or platter, or place them directly on the table. For my daughter's rainbow themed party I painted the  wood pins in rainbow colors and arranged them all around the table of treats. It was adorable!

DON'T YOUR KIDS JUST LOVE CATERPILLARS?


I am pretty sure almost everyone recognizes the picture above! Yeah! "The Very Hungry Caterpillar" by author and terrific illustrator Eric Carle. But does your child really knows what a caterpillar is? Caterpillars are the larval state of butterflies and moths. Show your kids these amazing pictures from Wikipedia! Wow! Aren't they beautiful?  Don't your kids love them? Well, they will if you grow some at home! Simply buy the Butterfly Garden (bellow) by Insect Lore and you too will love them! It is fascinating to see how fast they grow!


Think outside the cocoon! How about having a caterpillar party for your child? You can make caterpillar cupcakes, rent an inflatable crawl toy and buy stickers like these! (or go to ideastudiodesign.com, they can personalize everything paper, from your party to your life!)



Other foods you can arrange and serve as the cute creatures include cookies, crackers and mini pancakes. Basically, anything round!

STIMULATING YOUR CHILD'S IMAGINATION



Nothing is more powerful then a child's mind! Unfortunately nowadays kids spend too much time passively in front of the TV, watching cartoons or playing video games.  Let me guess, when you were a child you spent a lot more time outdoors, riding bicycles, rollerblading and running, right? If you are as lucky as I was you also had a lot fun climbing trees and eating fruit you just picked! Since we didn't have all these toys we have today we had to use our imagination! As parents, we should encourage imaginative play. How? Try to guide your child into discovering possibilities by themselves in a way that they will think the idea was theirs and use suggestion or demonstration with younger ones. With time they will pick up on it and start to be more creative, which is a problem-solving skill that will help them for a lifetime. You can say for example: "I see your baby doll feels cold, what do you think we could use this paper for that will warm her up?" or at the park "Oh no! mommy forgot the toy bucket! What could we do with the sticks of this tree over here?" So here are just a few suggestions:
  • Imagination for TV lovers: watch a recorded  program, preferably one that is narrative. Stop between 5 and 10 minutes before the end and make a game of everyone guessing what the end of the story will be, then watch the remaining. This stimulates creativity in a fun way.
  • Imagine Paper: with a piece of paper you can make a ball, an airplane, a boat, a hat, a telescope, a clarinet, a blanket or a mat for a doll or fold in a upside down V for a little house. Or if you are really into folding try some origami for kids.

  • Imagine Art: Crayons, paint, pencils, markers, glue, tapes, popsicle sticks, play-dough and many others are all known to all. How about magazines? Cut out several pictures from magazines with your children and ask them to choose a few (less for younger ones, more for older ones) and ask them to tell a story with the pictures. They can glue them on a paper if they want to and if they are old enough they can even write the story!

  • Imagine Music: Simply put on some music and dance with your child. See if you can close your eyes, hold hands to give your child a sense of security, and ask if he/she can identify the instruments played. Clap, stomp make gestures with the rhythm and of course don't be scared to sing along!

  • Imagine at the Park: Do not bring toys, shovels and buckets to the park. Show you child how use a shoe to push the sand around to build a castle or mountain. Use a tree stick as the bridge or the miniature tree for the castle. Use leaves, pine cones or wild flowers to decorate the building! Or ask them if they could use the stick to draw or write on the sand. Or if you really want to have fun build a miniature tree house like the one on the top of this page! Make it a family event and then compare the  similarities and differences of each family member's ideas.

  • Imagine on your Backyard: Pretend to be a scientist! Grab a couple magnifying lenses and see what kind of creatures and plants you find. Then talk about them or ask you child to draw them. 
These are by no means the only ways you can encourage your child's imagination, but rather, just a few examples of how you can add some creative fun to your day.

TEN FREE ACTIVITIES, KIDS WILL ENJOY!


You are going to have the kids home for spring break but you have no idea what to do! You are having to cut on your expenses and would like to find cheap or free activities to do with the little ones. Well, chill out. I will give you a few activities that won't break the bank and will give you a break this spring break! What kids really enjoy are simple, different and silly ideas!

Indoor Picnic - This is a hit! Make snack time fun! Set a picnic blanket, regular blanket or even a table cloth like I do on the floor at your leaving room or playroom. Serve your goodies in the middle with the kids sitting around. I serve only dry snacks and cartoon juice (no open cups) to avoid spills. When snack is over, remove everything, close the fabric and shake it outside. The birds will thank you for the crumbles!

Silly Billy Dress up Party -The game is: Everyone has to change clothes but no one can wear one's own clothes, so mommy can put on daddy's shirt and shoes, with little girl's pink bow and jewelry, little boy's backpack and two belts tied together! What are you gonna wear?

Gardening - Perfect timing! It is time to plant flowers and herbs, trim, pick up weeds... Tip: use a laundry stool to sit on when planting. It will put you in the right height to work on flower beds or pots without compromising your knees!

 

Cardboard house - If you go one night to Walmart or Target and ask if they have an extra large empty box, most likely you will get one! Well with a sharp knife cut a door one one side and make windows on the other three. The kids can decorate the walls inside with their artwork, stickers or make paper "curtains". Let them use a bath mat as their rug! Then get that magazine you haven't had time to read yet and relax! With smaller boxes you can make houses or beds for dolls and animals.

Artwork - Get down and dirty with your kids! I mean down on your knees and dirty with paint! Put on clothes you won't mind getting stained. Go outdoors and set a few disposable plates or cups filled with acrylic paint. About four different colors is enough, plus white and black. Use big pieces of paper or canvases if you can, each one gets one media (you do your own, so you are not trying to "guide" them much - remember, whatever they do it is beautiful!) or use a very large one everyone paint together. To paint use not only your fingers but your whole hands if you want. You will be surprised what a  beautiful artwork you got to hang in the playroom or your kids' bedrooms!
 
Masks: You can make masks out of paper plates, paper bags or foam visors.

Paper work - Make a kite (it is wind season here in Texas!), fold airplanes, boats, hats,  tear strips of pastel color craft paper and save it in a bag to use as filler for Easter baskets or make bunny ears and attach to tiara (you can cover a plastic tiara with ribbon all the way around it!)

Nature Trail Hunt: If you are not lucky enough to have a trail nearby your backyard or local park is plenty! Paint an egg cartoon as seen left, and go on a hunt with a magnifying glasses looking for treasures and souvenir to fill up all the colored "bowls"! How fun! If you are not able to fill out all the cups, talk about it with the kids: "What in nature has that color at another time of the year? Is there any flower that color we can't find here but we have seen before?"...


 Baking and cooking - Kids love helping in the kitchen simply because that's what moms do! And they tend to eat better when involved into the cooking process. So, let them choose what they want to do (but you give the options). Let them help with preparation according to their age. While younger ones will be happy just sprinkling cheese for example, older ones will love to mix or even chop! Cooking Ideas: cookies, of course; the usual muffins but even if you use pre-mixed, let them pick if they want to add nuts, dried fruit/raisins, banana slices or apple pieces to their cups; crescent rolls filled with raisins, cheese stick, turkey & cheese; celery filled with cream cheese and  nuts or raisins or herbs; pizza: buy ready made dough, on a lazy susan place several bowls with different ingredients (I chop different veggies because my kids...well are my kids!, mini pepperoni, chpped turkey breast and olives), if kids are old enough let them spread the tomato sauce, but even the younger ones like to rotate the bowls and make their pizza their own! The picture bellow is from a play date in my house where the adults ate pizzas prepared by a 2 year old girls and two 4 year old boys! And they were all delicious!! Everything omelets: open your fridge and chop whatever can be cooked in 3-5 minutes and let them sprinkle the pieces while you take care of the pan; sliced bread pizzas are also easy and fast (a slice of bread, cheese, 1 or 2 slices of tomato and oregano); or slicing fruit with an apple slicer but be creative, we also use ours to slice pears, peaches and nectarines, or slicing bananas you can use in a recipe or simply sprinkle with powdered chocolate or chocolate sprinkle and enjoy! Here other tools kids love to use: strawberry slicer, egg slicer, melon baller (which you can use for watermelon, papaya and cantaloupe), avocado slicer, veggie peeler and milk frother (we use also to make salad dressings and beat eggs).

LOST SOCKS? RECYCLE THEM THIS EASTER!

  

What a cute creative idea from Family Fun Magazine! Fill them up with lentil passing the heel a little and close with rubber band. Tie a ribbon just below the heel to make the head and cut the cuffs for ears. Cotton ball or white pom pom for a tail! For face features they used cut felt but I will use old lost buttons for eyes and nose, for an even more recycled bunny!

DO NOT SHAVE! LEARN TO WAX YOURSELF



According to the groundhog we have only 3 more weeks of winter! And the new trend will be mini skirts! Are your legs ready for summer?
There are many reasons you should switch from shaving. Waxing leaves your skin smoother because it removes the hair from the root, so it also lasts A LOT longer. You can do it at any time, while your baby is napping or after the kids went to bed. Doing it yourself it costs virtually nothing. As with anything else it will get easier as you practice. With my sugar wax recipe, cleaning could not be easier, and the sugar healing properties will leave your skin even smoother!

For the removal of the wax, you can choose to reuse and recycle by using an old cotton T-shirt cut strips, or you can cut unbleached muslin. Or you can buy pre cut paper fabric strips or rolls at your local beauty supply store (I do!). For most of your waxing you will need 3" x 8" strips. I like to cut a few of those into small 1 to 1,5'x3" small strips I use for my Brazilian wax or lips. For beginners I would recommend you start doing only your legs, as you get better and faster at it, you can do your underarms and lastly your bikini area. Please note, my Brazilian Wax recipe is not recommended for eyebrows, you can use for your lips, but make sure you hold your skin taut. 

If using my sugar wax recipe you can heat up the wax in the microwave or on a double boiler. Time will vary according to amount of wax and microwave potency. After wax melts let it sit for 3 minutes and test the temperature on your wrist first. You may have to heat up the wax again if you are waxing a large area. If you are using a store bought wax, follow the manufacture's directions.

The waxing technique is simple: 
You  need: wax, strips and after waxing cream.
  1. After cleansing skin, dry and apply powder on the area you are going to wax. If you sweat, dry and reapply powder. This will minimize skin irritation and helps  with wax application.
  2. Using a disposable Popsicle or craft stick apply a thin layer of wax on the direction of hair growth (from root to ends).
  3. Cover with cotton or paper strip, leaving about an inch where you can grab it and apply a little pressure.
  4. Hold the skin taut with you weakest hand, right bellow where you grab the strip and grad the strip with the other (the right for right-handed).
  5. Wait a few seconds and pull as fast as you can against  hair growth and maintaining your hand as close to your skin as possible. (Not pulling up, but parallel to the skin). Tip for a painless pull? The trick is to pull as you exhale, because when you breath out your pores open! So breath in, and exhale/ pull!
  6. Applying pressure immediately on the spot where you just removed the hair will also ease any discomfort. This tricks our brain into sending a message of pain!
  7. The strips can be used a few times. Throw them away if using paper strips. If using fabric you can soak them in warm water for 30 minutes, drain and wash.
  8. When using sugar wax, to remove any excess wax from your skin and work area all you need is water! If you are using store bought follow direction. Most are hard to remove and are fat soluble, thus you will need oil to remove wax and you cannot reuse strips.
  9. Always apply a soothing after wax cream, bought at your local beauty store. They have antiseptic and soothing properties. Alternatively you can use drops of Tea Tree Oil on an Almond Oil base.
For extra beautiful legs and to avoid ingrown hair exfoliate at least twice a week with sugar scrub between treatments (after waxing wait 24 hrs to exfoliate).

MAKE YOUR OWN SUGAR WAX - BRAZILIAN SUGARING


The trick in making Brazilian Wax is getting the texture of the wax just right. But don't worry I will help you achieve a perfect wax! The advantages are many: affordable and easy to make,  easy to apply and remove, doesn't need any chemical to remove residues (just water!) and since it is 100% natural it is gentle even on the most sensitive skin!

INGREDIENTS:   
3 cups sugar
1 cup honey (organic is better) 
2 limes (or lemon) 
1 tbsp water (or more) 
microwave safe glass jar (to store)

    You may choose to make a "half recipe" the first  couple times, until you master the wax consistence.
    Combine sugar, honey and juice from 1 lime in a heavy saucepan. Mix well with a wooden spoon, then heat in medium flame. Keep stirring the mixture until all the sugar has melted and you have a thick brown liquid.  Squeeze the other lime and add the water to thin out the wax, stirring again. Remove from heat. If your lime wasn't juicy you may need more water. 
    To test the consistence, take a tiny bit out on a spoon and run cold water over it. When it cools enough to touch, it should be stretchy. You can test it on the inside of your wrist. Do this about every one or two minutes while the wax is simmering until it stretches out on your arm and pulls off easily. If it is brittle it was overcooked, if it sticks and won’t come off it’s not done yet. 
    Let it cool for five minutes before pouring in the glass jar. Make sure you do not place the jar directly on a cold surface like granite, as the temperature shock will break the glass.

    HOMEMADE SUGAR SCRUB FOR DRY HANDS!



    Am I the only one with iguana skin this winter? If housework, weather, hard water or all of the above have made your hands rough and dry here is the best remedy! So easy and affordable!

    I cannot give you quantities because I have been doing this scrub for many years and I go by texture, not amounts. Pour some olive oil in a clean and dry glass jar, add about a quarter that amount of honey and a quarter of lime or lemon juice. Thicken the mixture with brown or white sugar. You can add a few drops of you favorite essential oil but that's not necessary. Scrub your hands very gently letting the sugar grains and citric acid do the exfoliation, pressing too much will do more harm then good. Scrub until sugar dissolves. Rinse with cold water. Remember the hot water is one of the causes of dry skin! Close the container and leave by your kitchen sink.

    There are many ways you can use sugar besides to sweeten! But do not substitute  salt  for sugar though. Salt is drying to the skin, sugar is  very healing. Use the best ingredients. Organic is always better and olive oil should be cold pressed extra virgin! I love to use this scrub for my feet and knees too!

    In a hurry? OK! squeeze half a lemon or lime straight onto the palms of your hands, pour a couple tbsp of sugar and a tbsp of olive oil. Scrub, scrub, rinse! Soft hands at last!
    Make sure you rinse very well before sun exposure. Lime/lemon and sun do not go well together!

    You tried and loved it? Try to make a big jar and keep it in your shower for a whole body scrub! Great to avoid ingrown hair after shaving or waxing.
